Eat the Change Fall Snack Mix
- 1 pouch Eat the Change Mushroom Hickory Smokehouse Jerky
- ½ cup toasted pumpkin seeds (store bought or try our recipe below!)
- ½ cup sweetened dried cranberries
- ½ cup toasted chickpeas
Combine all ingredients and enjoy 😊
Roasted Pumpkin Seeds
- 1 pumpkin or winter squash
- 1 tablespoon salt
- 3 cups water
- About 1 ¼ teaspoons of your favorite spice blend (we like using ¼ tsp allspice, ½ tsp cumin and ½ tsp paprika)
- 1 tablespoon vegetable oil
Cut open and remove seeds from pumpkin or winter squash. Place seeds in medium saucepan (don’t worry about cleaning the pulp if too clingy). Add water and salt to saucepan and boil for 10 minutes. Drain and remove pulp. Toss seeds with oil and seasonings. Spread onto parchment lined sheet tray and roast on 375F for 5-20 minutes (time will vary depending on size of the seeds). Enjoy! 😊
Blackberry Sage Sparkling Cider
- 1 pound frozen blackberries
- 6 fresh sage leaves
- ½ cup agave
- ½ water
- 1 cinnamon stick
- 1” piece fresh ginger, peeled and sliced
- 1 bottle sparkling cider
In a medium saucepan, combine blackberries, sage, agave, water, cinnamon stick, and ginger. Bring to a boil and allow to simmer for 15 minutes. Remove cinnamon stick and add all remaining ingredients to blender. Blend until smooth and strain mixture through a sieve. This may be enjoyed on the rocks or as an iceless spritzer. Fill glass with ice, add about 2 tablespoons of Blackberry Sage syrup and top with sparkling cider. Enjoy with our Eat the Change Fall Snack Mix.
