If you love BLTs, you’ll be all over this sandwich. Thin sliced fried tofu seasoned with soy sauce and nutritional yeast on a sandwich with avocado, mayo, tomato, and lettuce…it doesn’t get much better, or easier. One bite, and this will become a staple sandwich for you.
INGREDIENTS (2 SERVINGS)
1 block (14 ounces/400 g) extra-firm or firm tofu
2-3 tbsp olive oil
2-3 tbsp tamari or soy sauce
2-3 tbsp nutritional yeast
4 slices of your favorite sandwich bread
4 tbsp vegan mayo, such as Wicked Kitchen Caramelized Onion & Garlic Mayo
1 avocado
1 tomato
freshly ground black pepper
lettuce leaves
INSTRUCTIONS
- Press the tofu to drain excess water. We just do it over the sink between our hands. It only takes a minute or two turning it over and over.
- Slice the drained tofu crosswise into 8 or 9 rectangular slabs.
- Heat a heavy skillet like cast-iron over medium heat, and swirl in some olive oil to coat the pan bottom. Now add your tofu, cut sides down, and pan-fry it until golden brown, 3-4 minutes per side. Remove it to paper towels to drain excess oil.
- Then transfer the tofu to a mixing bowl and scatter on the tamari and nooch. Toss until the tofu’s good and coated.
- Toast your bread, and while that’s going, remove the avocado pit (don’t cut yourself!). Then slice the avocado in the peel. Slice the tomato too.
- Spread the mayo on all the pieces of toast, then build each sandwich on one piece: seasoned tofu goes down first, then the sliced tomatoes, avocado, a pinch of black pepper, and the lettuce.
- Top with the other pieces of toast, slice on a diagonal, and dig in with two hands. Sooooo good.
