Baked Beans with Hickory Smokehouse Mushroom Jerky

Did you think baked beans were just for summer cook outs? This dish is SO GOOD we like to enjoy it year-round!

Rich, smoky, and warming these beans are a great source of plant-based protein and are super satisfying as a side dish or main event! We added our Eat the Change Hickory Smokehouse Mushroom Jerky to give that "cooked all day" depth of flavor. This is a recipe that will delight just about anyone!

Baked Beans with Hickory Smokehouse Mushroom Jerky (serves 4)

1 19 0Z CAN              Cannellini or Navy Beans

1                                 Onion, finely chopped

2 PACKS                    Eat the Change Hickory Smokehouse Mushroom Jerky

1/2 TBSP.                   Olive Oil

1/3 CUP                     Crushed Tomatoes

4 TBSP.                      Maple Syrup

1 TBSP.                       Brown Mustard 

1 TBSP.                       Lemon Juice

1 TBSP.                       Vegan Worcestershire sauce (we like Annie’s)

1/2 TSP.                      Smoked Paprika

1 TSP.                         Salt & Pepper

1/4 CUP                      Water

Instructions

Heat olive oil in a skillet on medium heat. Add your chopped onion and allow to cook on medium low heat for 10 minutes, until the onion caramelizes.

Drain your can of beans, rinse with water, and add to the skillet. 

Next add crushed tomatoes, mushroom jerky, maple syrup, brown mustard, lemon juice, Worcestershire sauce, smoked paprika, salt, and pepper and mix together on medium heat. 

Allow to simmer on low heat for 5 minutes, adding a bit of water to thin out your sauce if it becomes too thick. Enjoy!
